Maz: Bridging the Peruvian landscape with Japanese Seasonality

A celebration of regional biodiversity

June 10, 2025

Peruvian biodiversity: MAZ stands at the forefront of culinary innovation, showcasing the rich biodiversity of Peru intertwined with the sensibility Japanese culture has towards nature. This culinary project is led by Chef Virgilio Martinez, the co-founder of research organization and NGO Mater Iniciativa. Inspired by Mater’s motto: "afuera hay más" (there is more outside), the restaurant deeply respects both the Peruvian landscape and the Japanese philosophy of seasonality, crafting a distinct dining experience that celebrates the core tenets of both food cultures.

All about altitude: When guests arrive at MAZ, they can expect an immersive vertical expedition of Peru’s various altitudes, reflecting the nation’s multitude of ecosystems. The menu is presented as moments of a travel experience, whereby natural elements are reinterpreted through a gastronomic lens.

Menu mainstays: On the restaurant’s menu since opening night, a Peruvian traditional method for roasting potatoes underground – "huatia" – is adapted to incorporate Japanese seasonal produce, such as yurine (lotus root), takenoko (bamboo shoots), and sansai (wild vegetables). This method not only highlights the inherent flavors of the temporal flora but also pays homage to ancient cooking practices. Artistic influences play a crucial role in the creation of timeless dishes, with a strong emphasis on local ceramics, cutlery, and glassware that enhance the presentation and overall dining experience.

Collecting accolades: Since its opening, Maz has quickly garnered a roster of awards, achieving an impressive 69th position on Asia’s 50 Best Restaurants 2024 and earning two Michelin stars in its inaugural year. Additional recognitions include being named the 5th best vegetable restaurant in Japan by the Green Guide and receiving a Silver Medal from Star Wine List 2024. Chef Santiago Fernández, who leads the kitchen, has also been honored with a spot in Forbes' 30 Under 30 Japan 2023 and the La Liste Talent of the Year Award, further solidifying Maz’s reputation as a leader in the culinary landscape.
